Crispy Baked Chili Chicken

I found a recipe that should add a little bit of kick to you average baked chicken. It’s a simple one too, which is great!

You’ll need…

2 Tbsp. (about 1/4 pkt.) SHAKE ‘N BAKE Original Chicken Seasoned Coating Mix
1 tsp. chili powder
1/4 tsp. garlic powder
2 small boneless skinless chicken breast halves (1/2 lb.)

PREHEAT oven to 425ºF. Mix coating mix, chili and garlic powder. Use to coat chicken as directed on package.
PLACE on baking sheet.
BAKE 20 min. or until chicken is cooked through (165ºF).

Baked Chicken Pie?

Once again, skimming through recipes and I came upon this little number. It’s for what is called Baked Chicken Pie! Sounds good! Hopefully, I’ll be able to try it soon.

Cover the bottom and sides of a deep dish with a thick paste.
Having cut up your chickens, and seasoned them to your taste, with
salt, pepper, mace and nutmeg, put them in, and lay on the top
several pieces of butter rolled in flour. Fill up the dish about
two-thirds with cold water. Then lay on the top crust, notching it
handsomely. Cut a slit in the top, and stick into it an ornament
of paste made in the form of a tulip. Bake it in a moderate oven.

It will be much improved by the addition of a quarter of a hundred
oysters; or by interspersing the pieces of chicken with slices of
cold boiled ham.

You may add also some yolks of eggs boiled hard.

A duck pie may be made in the same manner. A rabbit pie also.

Filmmaker Documents School Lunches

Veteran independent filmmaker Amy Kalafa recently made a documentary on how school lunches have become so unhealthy and what some of the school districts are planning to do to change this.

In this film titled, “Two Angry Moms,” she hopes that parents who see the film will be encouraged to take action and do something about it this coming school year.

Kalafa and the other “angry mom,” Susan Rubin, a nutritionist and mother of three, came up with the title for the documentary one day while just throwing around ideas and that one just seemed to fit, especially since they discovered that a former Texas secretary of agriculture was quoted saying that, “it would take 2 million angry moms to change the food programs nationwide.”

Kalafa visits five schools in the film and one of them, Katonah-Lewisboro School District in NY, one day served baked chicken with olive oil and herbs, cauliflower and roasted sweet potatoes. A very nice, healthy meal if I say so myself. Kalafa said, “Kids were buying it and they were liking it. Surprise, surprise.”

I personally feel that this is an ever growing problem today. More people need to stand up for a healthier lifestyle for not only their children, but themselves as well.

Adding Nuts To Your Baked Chicken Recipes

Adding nuts to your baked chicken recipes can be very beneficial.

Nuts have a nature of protecting against certain types of fat and also contain powerful antioxidants that can help prevent heart disease and certain types of cancer.

Many nuts contain monounsaturated and polyunsaturated fats which are good for the heart. These fats can lower bad cholesterol levels and raise the HDL- Cholesterol levels, which are good.

One way to eat nuts without over doing it is to incorporate them into your baked chicken recipes. Simply add ground nuts to the breading of your favorite baked chicken recipe. This will also give the chicken and deep, rich flavor.

Barbecue Baked Chicken Recipe

I was searching for baked chicken recipes when I found a video. The video was a recipe for barbecue baked chicken. The chicken is delicious and I decided to post the recipe in word format so that all may have the recipe. This recipe serves 4 people.

Ingredients:
6 drumsticks
8 tbsp tomato ketchup
2 tbsp brown sugar
2 tbsp soy sauce
4 tbsp Worcestershire Sauce
2 garlic cloves, chopped
1 tbsp Dijon mustard
4 tbsp water
3 tbsp olive oil
2 chopped spring onions
salt and pepper

You’ll also need the following utensils:
2 saucepans
sharp knife
baking tray
bowl
wooden spoon
chopping board

Preheat the oven to 400 degrees Fahrenheit.
Mix the ketchup, brown sugar, water, Dijon Mustard, chopped garlic, soy sauce, and Worcestershire Sauce in a saucepan. Heat gently, while stirring continually.
Prepare the chicken by cutting small slits into the drumsticks. This helps add flavor.
Boil the chicken and then cover with cold water and add 4 tbsp of the marinade. Boil again and simmer for 10 minutes. Remove the scum from the surface.
Leave the chicken to cool then cover with marinade and season with salt and pepper.
Put the chicken on a baking tray and allow drumsticks to have space.
Place on the middle shelf for 20 minutes then add olive oil and springs onions. Then place back in the oven for 5 more minutes.

Baked Chicken Recipes vs. Grilled Chicken Recipes

There’s been an ongoing battle between baked chicken recipes and grilled chicken recipes.
